Ingredients:

- 3 tablespoons balsamic vinegar
- 2 tablespoons honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs (rosemary or thyme), chopped
Instructions:
- Preheat the oven to 425°F (220°C).
- Cut the vegetables into bite-sized pieces and place them on a baking sheet.
- In a bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, salt, and pepper.
- Pour the balsamic honey mixture over the vegetables and toss to coat evenly.
- Roast in the oven for 20-25 minutes or until the vegetables are tender.
- Sprinkle with fresh herbs before serving.
