Honey Balsamic Roasted Vegetables

Ingredients:

  • Assorted vegetables (carrots, bell peppers, zucchini, cherry tomatoes, etc.)
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (rosemary or thyme), chopped

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Cut the vegetables into bite-sized pieces and place them on a baking sheet.
  3. In a bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, salt, and pepper.
  4. Pour the balsamic honey mixture over the vegetables and toss to coat evenly.
  5. Roast in the oven for 20-25 minutes or until the vegetables are tender.
  6. Sprinkle with fresh herbs before serving.
