Honey Lemon Chicken Stir Fry: Ingredients:
- 1 lb (450g) chicken breast, thinly sliced
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon fresh lemon juice
- 1 teaspoon grated lemon zest
- 2 tablespoons vegetable oil
- 3 cups mixed stir-fry vegetables (bell peppers, broccoli, snap peas, etc.)
- Cooked rice or noodles for serving
Instructions:
- In a bowl, mix soy sauce, honey, lemon juice, and lemon zest to create the sauce.
- Heat vegetable oil in a wok or large skillet over medium-high heat.
- Stir-fry the sliced chicken until cooked through.
- Add the mixed vegetables and continue to stir-fry until they are tender-crisp.
- Pour the honey-lemon sauce over the chicken and vegetables, tossing to coat evenly.
- Serve the stir-fry over cooked rice or noodles.
