Honey Walnut Banana Bread

Ingredients:

  • 3 ripe bananas, mashed
  • 1/2 cup honey
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts
  • Optional: 1/2 cup additional walnuts for topping

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch (23x13 cm) loaf pan with butter or cooking spray.

  2. Mash the Bananas: In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.

  3. Combine Wet Ingredients: Add the melted butter, honey, eggs, and vanilla extract to the mashed bananas. Mix well until the ingredients are thoroughly combined.

  4. Sift Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking soda, and salt.

  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.

  6. Add Walnuts: Gently fold in the chopped walnuts into the batter.

  7. Pour into Loaf Pan: Pour the batter into the prepared loaf pan, spreading it evenly. If desired, sprinkle additional chopped walnuts on top for a crunchy crust.

  8. Bake: Place the loaf pan in the preheated oven and bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

  9. Cool: Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

  10. Slice and Serve: Once cooled, slice the banana bread and serve. Enjoy the delightful combination of honey and walnuts in every bite!
